Blueberry Compote Recipe


    1 Cup of berries
    2 Tbsp Sugar
    1 Tbsp fresh lemon juice


    Combine the ingredients in a sauce pan and simmer for 30 minutes, or until the berries break down.
    Allow to cool and store in the fridge for up to a week.

I still have some big bush blueberries in my freezer and I have plan to using this recipe to make that delicious blueberry compote. Blueberries have proven to be a very healthy fruit and I think eating them helps in the prevention of strokes.
